2 cups cold heavy cream, 2–3 tbsp powdered sugar and 1 tsp vanilla extract. The all-purpose topping for pies, waffles, hot chocolate and fruit.
Chocolate whipped cream
2 cups cold heavy cream, 2 tbsp unsweetened cocoa powder and 3 tbsp powdered sugar. Sift the cocoa and sugar together and whisk them into a little of the cream first so there are no lumps.
Coffee whipped cream
2 cups cold heavy cream, 2 tbsp powdered sugar and 1–2 tsp instant espresso powder dissolved in 1 tbsp of the cream. Great on iced coffee, mochas and tiramisu-style desserts.
Maple whipped cream
2 cups cold heavy cream and 2–3 tbsp pure maple syrup. Perfect on pancakes, pumpkin pie and lattes.
Cinnamon whipped cream
2 cups cold heavy cream, 2 tbsp powdered sugar, ½ tsp ground cinnamon (sifted) and ½ tsp vanilla extract. A seasonal topping for apple desserts and chai.
Strawberry whipped cream
2 cups cold heavy cream, 2 tbsp powdered sugar and 2 tbsp freeze-dried strawberry powder, sifted. Adds color and fruit flavor without extra liquid.
Whipped cream for hot chocolate
For hot chocolate, use the chocolate or cinnamon recipe above, or the classic vanilla with an extra tablespoon of powdered sugar. Dispense it straight onto the hot drink just before serving so it holds its shape.
